Cacoethes: An irresistible urge to do something inadvisable
Sunny and quite fresh morning. It has been raining whole night, and everything is proper soaked. I'll go to cottage again, and start with late autumn and winter crops. Rain saved me from watering at least one week. We should have more rain at Tuesday and Wednesday. Now is time for cup of tea.
LB the orange cake has whole cooked oranges which are chopped in the mixer, ground almonds instead of flour, sugar and eggs, Spanish recipe. Tried to download it, didn't work. I'll copy it. Oh dear, it's rather long!
Bizcocho de almendras y naranjas
- Orange and almond sponge
Made
with oranges and ground almonds. This classic Spanish cake has a moist, light
texture and a wonderful fresh flavour.
Ingredients:
3 small oranges
roughly chopped with skin and without pips. (I used medium oranges.)
6 eggs, separated
200 g caster sugar
220 g ground almonds
2 tbsp flaked almonds
icing sugar sifted to
decorate
Preparation:
Place
the chopped oranges in a small saucepan. This bit to be done in advance.
Add
1 tablespoon water, then cover the pan and simmer gently for 30 minutes or
until the oranges are soft and all the excess liquid has evaporated. May need a
bit longer, need to make it suitable for a mixer to chop it very finely.
Leave
to cool. Preheat the oven to 180º C. Line the bottom and sides of a 23 cm
spring form cake tin with baking paper. I used a 26cm round cake tin, could use
a long tin, don’t suppose it matters.
Finely
chop the oranges in a food processor or blender, or with a sharp knife.
Place
the egg yolks and half the caster sugar in a large bowl (the rest will be added
and mixed in this bowl) and whisk for 2–3 minutes or until pale and quite
thick.
Place
the egg whites in a bowl and whisk with an electric whisk until they form stiff
peaks.
Gradually
add the other half of the caster sugar, and then whisk for 1 minute.
Add
the oranges to the egg yolk mixture and beat to combine well. Carefully fold in
the ground almonds with a large metal spoon.
Stir
in 3 spoonfuls of the egg whites to loosen the mixture, and then gently fold in
the remaining whites.
Transfer
the mixture to the tin and level the surface. Sprinkle with the flaked
almonds.
Bake
for 45 - 50 minutes or until the cake is golden and a skewer inserted in the
centre comes out clean.
Check
the cake after 20 minutes and again at 30 minutes, and cover lightly with
aluminium foil if it is browning too quickly.
Leave
the cake to cool in the tin, then turn it out, peel away the lining paper and
transfer to a serving plate. Don’t turn out when hot – too fragile. I put a
plate over the top and turned it out, removed the baking paper, then put
serving plate over it and turned back the right way up. I don’t have a spring
form tin.
Serves
10 – 12 people.

Oh Busy, thank you so much for passing on the recipe to me. That is so kind of you. I have been looking for gluten free recipes for a while and that one is just perfect. I bake all my cakes for coffee/tea mornings at church.

Our internet has been off since Thursday and a VM engineer is booked for Wednesday. Not good enough
Morning @Biglad. I am not happy with the thought that this weather is playing into Australia's hands. Sorry about the internet debacle. Been there - countless times - but latest skirmish has given me a reduction of £10/month with a 'gift' of £10 off my next bill for all the stress I've had to go through. I am pleased with this result - 'til the next time! 😡
