What to do with rhubarb?

Hi, ive got tons of rhubarb to use up, i like crumble but hate making it! Also could do without the extra calories! What can i do with it please? image

    This is a real favourite here http://www.bbcgoodfood.com/recipes/10500/rhubarb-and-custard-cake ,  - I cook several of these each year.  If you eat it standing up it's not fattening!!! image

    Other favourites are rhubarb sorbet and rhubarb ice cream, rhubarb and ginger jam and rhubarb chutney.

    Rhubarb and (something that'll make it set, like gooseberry) jam is good - and makes a good present.

    Strawberry and rhubarb jam. Or raspberry and rhubarb.

    Rhubarb & Raspberry Jam

     1lb raspberries

    2lb rhubarb

    3lb ordinary sugar

     

    Cut up rhubarb and stew in a scant ¼ pint water until soft. Add raspberries and sugar. Bring slowly to the boil until sugar is dissolved, stirring. Rapid boil for ~ 15 mins. Check for setting. Pour into warmed jars.

    Wow guys, you really are foodies! I forgot to mention that im a rubbish cook! That sorbet sounds good Dove, where can i find the recipie and idiot proof instructions please? image

    Last year I stewed some rhubarb that I had grown - chopped into little cubes & then stewed with a little Splenda (I have diabetes), until it was soft & falling into shreds & then put it in jars with some of the liquid (made a jelly with the rest of the liquid!).  I put a couple jars in the freezer once cold & used the other for a sweet fruity kick to my morning porridge!  Really nice.  Would be nice in rice pudding too!!

    Freeze it. Just wash and coat with sugar and bung it in the freezer. Defrost when you need it.

    We freeze a lot of rhubarb for use throughout the year, you can't beat rhubarb crumble with custard in the winter. For a summer dessert put broken up ginger biscuits in the bottom of a glass, put a layer of rhubarb on top, then a layer of creme fraiche and then sprinkle some brown sugar on top. Put in the fridge for a couple of hours before serving... It's scrummy!

    Sorry to be stupid, the layer of rhubard- simply defrosted or fresh and stewed? Told you im rubbish at this stuff! Sounds yummy tho image
