I make an easy veggie bake using a layer of courgettessprinkling of sliced onions, ,a layer of tomatoes, layer of sliced par boiled potatoes, bit of broccoli, pour a jar of carbonara sauce over(the stuff you can buy for making lasagne with)  and then grated parmesan. Bung in oven for 30 mins then eat.. You can vary veg according to what you have. Can change potatoes for sweet potatoes or squash or even pasta. (course that makes it a pasta bake.)

    Bekkie & Fairyimage

My version of Summer veg bake ..well today's version. image

    All my own veg image

New spuds diced and fried in olive oil, added chopped french beans & few baby runners, courgettes and shallots cooked until still all a bit firm ( that info for Bekkie) added good shake of black pepper. Left on the side.

Sweated off chard leaves & frozen sprouting broccoli from last year. Chopped it with scissors. Then added chard stalks and a few of my precious peas,  not got many image did a bit of a stir fry with it then added stuff from the side and some dried Italian herbs..

Made a white sauce and added some wine and crushed garlic.

Put the lot in a shallow largish oven dish, pour sauce over put slices of tomato on the top & bung in oven & cook until bubbling, then added grated cheddar & mozarella and put back in oven until melted. Served with fresh Greek basil which has a slight aniseed taste to it.

I so hope this doesn't disappear when I press submit image cos won't type it again image

Evening all. Survived work but voice is now wrecked & I have succumbed to a blanket on the sofa. I brought emergency rations of cider on my way home to sterilise my throat tonight (apples are goid for you after all!) - I thought to myself, what would Dove do?! ; (

Hello folks image  I'm back after spending the day with son and Aged Ps.

Ma doesn't know who I am - she thinks I'm her sister visiting to sort things out because her grandmother has just died - she's had a telegram! image  And why haven't I been to see her mother?

It's  as if I've not got a mother any more image

Pa knows who I am image

Things still getting bashed about in the garden - the mystery squash/raspberry conglomerate is totally entangled!

But my Star Child has its first flower image VERDUN!!!  My Star Child has it's first flower!!!imageimageimage

Is it all that talking you're doing now Clari that's wrecked your voice? Didn't realise you were poorly, soz. Hope you get better soon image

    Salt mine ok today.

KEF and Fidget, that sounds good. Bekkie, you need to 'man up' and read a cookery book image It's not that hard when you get going image

Clari, I think Dove would have 2 asprin, no cider, gargle with TCP and go to bed with a home made hot lemon & honey drink imageimage

Me, I'd have the cider and the asprin and eat maltesers.

Hope you feel better tommorow ..hugs x
