How nice to get a surprise visit from your son @Pat E.Ā My sister and her OH will drop into us at some point today on their way to the shared accommodation they will have with their daughter and her family near here (no-one has told me exactly where yet!).Ā Tomorrow we all descend on my daughter for a rolling buffet so there are things to buy and make for that today.Ā And they all want to go to Southwold on Sunday.Ā a) hope it's not raining, b) hope it's not too crowded and there is somewhere to park.Ā Can't remember the last time we were on the pier - probably the last time they all came to visit!
There is a fine rain outside but the sun is also trying to get through.

Enjoy your time with your son @Pat E and anyone else expecting family or friends to drop in over the weekend. Sun is trying to break through here, maybe the coming good weather forecast for the week ahead will actually happen. Must pop down to the local shop in a minute, it seems that someone in the household has drunk more milk and eaten more bananas than normal this week (normally do a stock up on Saturday mornings) - as we say in our house when something mysterious happens "it must be the CAT"!!

Evening all, enjoyed my shopping trip with my daughter yesterday, although it rained all day. Went to Dunelm in Bristol and spent a fortune, it's so enticing there with things you never knew you needed! Had lunch there as well, then went around again. Found a rug I liked for the hall but need to wait until the new stairs are installed so I get the right size.
Today the sun was shining so we decided to go up to the Oxfordshire village where my mum and grandparents are buried to lay flowers and have lunch at the nearby very good French-run pub. I was so pleased I had enough roses in the garden to pick for a lovely bouquet, red Royal William (my dad's rose) white Winchester Cathedral (my mum was born there) and the new pink DA rose 'Elizabeth' (self-explanatory!). Lunch was scrumptious as usual and we walked it off by a walk along the river bank.
It was a 2 hour trip each way so I'm quite tired now and an early night beckons.
Half a stone is a good achievement @Busy-Lizzie, all that painting must help! You'll be glad when it's finished.
Not sure I've ever had courgette cake but I do like carrot cake @Dovefromabove.

MAKESĀ
1kg loafĀ
INGREDIENTSĀ
60g pistachiosĀ
175g self-raising flourĀ
1 tsp ground gingerĀ
½ tsp ground star aniseĀ
200g light brown soft sugarĀ
50g caster sugarĀ
185ml olive oilĀ
2 eggsĀ
60g raisinsĀ (golden if you have them)
3 courgettes, unpeeled but trimmed, grated (200g)Ā
the zest of 1 lemonĀ
METHODĀ
Preheat the oven to 190C/gas mark 5. Butter a 1kg loaf tin and line the base and long sides with a sheet of baking parchment, allowing a little overhang at the sides. Once the oven is hot, roast the pistachios for eight minutes. Keep them whole and leave to cool a little.Ā
Mix the flour, a pinch of salt, the ginger and star anise together and add the pistachios. Place the sugars and oil in a large mixing bowl (I use a Kenwoood mixer) and whisk together until combined. Whisk the eggs in one at a time and keep whisking until emulsified (like mayonnaise). Ā Now add the rest of the ingredients, Ā using a large spoon or spatula to fold and combine into an even mixture.Ā
Transfer the cake batter to your lined loaf tin and bake for 35 minutes. Turn the tin around so that it bakes evenly and leave for a further 15-20 minutes. The end result should have a lovely springy feel. Allow to cool in the tin before removing. This will keep in an airtight container for up to three days and for up to a week if you store it in the fridge.
Even tastier with vanilla ice cream!Ā

Good morning all š āļøĀ Looks like a dry-ish fine-ish day ahead ⦠thatāll do me fine ⦠OH will be at work ⦠not sure what son has planned but I suspect it includes a lie-in š He has mentioned a car show this weekend somewhere in Norfolk ā¦
Iām going to pop a chicken in the slow cooker with some carrots and onions ⦠maybe a bit of lemon and some tarragon do you think ā¦few new potatoes and a bit of Cavalier Nero ā¦. ?
Then I must sort the chaos in the airing cupboard ⦠thereās some new bars of soap in there ⦠somewhere ā¦Ā
NB Meant to say, for the cake recipe above I use light olive oil not extra virgin, and Iāve also made it with ordinary veg oil and/or sunflower oil. Itās fine.Ā
