Recipe - Colonial Goose (from Good Housekeeping 'Cooking for Today') (serves 6-8)
4 and a half pound leg of lamb ... with the large bone removed so that there is a large 'pocket' but with the knuckle bone still in place if possible.
Stuffing ingredients 1 oz butter 1 tbspn clear honey 4 oz dried apricots 2 oz onion skinned and quartered 4 oz fresh white breadcrumbs 1/4 level tspn dried thyme 1 egg, beaten 1/4 level tspn salt freshly ground black pepper
Marinade 1/2 lb carrots, peeled and sliced 6 oz onion, skinned and sliced 1 bay leaf 3 parsley stalks, crushed 1/4 pint red wine
To make the stuffing Put butter and honey in a small pan melt over a low hear. Grate the onion and add to the breadcrumbs in a basin wit the melted butter, honey, thyme and beaten egg. Snip the apricots with scissors into the basin and season well and bind all together.
To stuff and cook the joint Trim any excess fat from the top of the leg of lamb and spoon the stuffing into the cavity, pushing it well in with the back of a spoon. Sew up with a trussing needle and fine string. Do not sew it too tightly or the skin may split while roasting.
Lift the meat into a large poly bag placed inside a large deep bowl. Add the marinade ingredients and leave in a cool place for about 6 hours, turning occasionally to baste the whole joint in the marinade.
When ready to cook remove the joint from the marinade and weigh. Roast at 350F for 25 mins per lb. If the meat starts to over brown cover with foil.
Remove the string and place the joint to rest on a serving dish and keep hot.
Pour off the fat from the roasting tin and stir a little flour into the juices. Cook for a few mins then add 2-3 tablespoons of the strained marinade and a little water. Adjust seasoning ... bring to the boil, stirring and simmer for a further 5 mins ... adding more water if too thick. Serve in gravy boat.
Sorry the measurements are in Imperial and the temperature in farenheit ... I do the measurements by eye now.
I have been known to add some orange juice to the marinade ... or even totally replace the red wine with orange juice as a family member is teetotal. I've also been known to add a few sprigs of rosemary and a crushed clove of garlic or three to the marinade.

Having felt very smug completing my 'to do list' a couple of weeks ago - sorting pensions/insurance/bank accounts and making appointments for blood donation/dentist, etc., I've written another list for this week, which is equally long covering exactly the same topics
The same company has taken two different payments for my car insurance and switching current account has thrown up some issues. Not to mention all those appointments which I've had to cancel and re-book due to OH having Covid
I must wrap the GCs' presents and take the car to the garage at 2pm to have new front tyres. They need changing so I've decided to have winter ones as my car isn't very good when it's icy. It's now obligatory to have winter tyres in some of the colder hillier parts of France.
I like lamb with fruit and did lamb with apricots for a dinner party. The guests said it was delicious, then years later one of my friends who had been a guest, in a conversation about food, said he hated meat with fruit, especially apricots and prunes. Can't please everyone.
I also like lamb slow cooked for several hours wrapped in foil with onions, rosemary, garlic and a glass of white wine. Then gravy made from the juices.

The fog has finally lifted here but I suspect it will roll in again later. The birds have been rapidly emptying the feeder I filled up the other day. Watching their antics is just so nice though. I've signed up already for the Big Garden Bird Watch which is on next month.
