The snag with making mint jelly is that mint is at its best now and the apple harvest is months away.
I use whatever tart apples I can get ... fortunately there’s usually some Bramleys around. I sometimes also bump up the pectin with some Certo if I have any.

Already too hot for me [15] and not cloudy like it's been the last few mornings, so it was a bit warm when I went out. The ash trees are just about green now, and the goldies are all very busy in the hedges. I should have taken my camera t'other day when we had layers of cloud, and one of the big ash trees at the farm looked brilliant against it, as the foliage hadn't really started. It was a bit Macbeth-y. Should I say The Scottish Play...or does it not count since I'm not saying it.... I love watching the wasps and hoverflies on big stones by the pond, or having a drink in the shallows @tuikowhai34

Today is a big day .....Mr C’s last day at work 😜. From tomorrow we will be a retired couple 🤣🤣. Looking forward to tackling lots of projects together, and, eventually, travelling the world 🌍 🌎. Think some English Sparkling might get cracked open tonight 🍾🥂

@Hostafan1 - Japan is top of the list 😀. However the list is long and keeps on growing .....West Coast Australia, New Zealand, South America, Caribbean, Iceland, lots of Europe (on a bike) .......sooo many places. 🌍🌎

another cause for celebration here ... we knew we’d lose some money as we cancelled our holiday before the travel ban.
We heard last night from Aspects that as well as the refund we’d already received, the remainder of the sum, deposit, insurance and everything has been credited to our account and we’ve rebooked for early next June at the earlier price ... very pleased 🥂

What a hot nite ,fan didn’t even help and it’s roasting here already got email my plants are out fir delivery which is great as only ordered the other nite now for a coffee ☕️ Also must remember to take my flip flops off in sun ☀️ starting to regret butchering my laurel last nite 🙈
