I fess up that I do buy watercress in bags when that's all I can get and don't have any growing. I will buy Mozzarella in bags as I get more stuck in the grater than goes on the plate
David - it's called 'added value' - you can charge much more for something if you've done something to it, even if it didn't need doing and also even if it makes the food de-grade faster than it would have done if it was left whole - that way the customer will have to buy some more sooner than they would have done otherwise.
Selling it in slightly larger amounts than anyone needs is also good 'cos that way you sell more than you would do otherwise but it gets thrown away 'cos it's past it's sell by date!!!
Convince the customer that it's more convenient like that and you're on your way to your first million!
I made scones yesterday with buttermilk - the sell by date on the buttermilk was 18 Dec but it was perfectly fine to use and the scones are fab.

Speaking of which, has anyone noticed the Birds Eye tv ads for bagged up chopped onion etc - just tip it into a pan, add water, rice and peas and voila - you have a risotto NOT!!! It looks absolutely revolting.

Actually, when I had time on my hands (must have been winter) I watched the TV prog 'How it's Made' and they showed the process of bagging this salad stuff.
After preparation, washing/de-lousing, they injected a gas (not sure which) into the bag to lengthen its shelf life.
Im the lazy swine that buys grated cheese, my arms and wrists cant cope with the grating these days! In all fairness, i imagine most people dont usually grate 500g at a time like i do
