Bekkie - I need to bake a cake to take on my next sailing trip. It needs (obviously) to travel well....any ideas? Bearing in mind I need to use my mother's fan oven which even she can't bake a cake in!

Steve - boiled fruitcakes are easy, store well and are not fussy about a reliable oven. I have a recipe passed down from my grandmother, but its not in my head. Let me know if you can't find one on the internet and I'll send it over. Its mostly butter, mixed fruit and some flour cooked in a saucepan, then baked for a couple of hours on a very low heat.

Cloudy here in N Belgium too. Need to do some weeding.tidying in the garden today. Herself has let it get a tad overgrown in places*. There should be a few beetroot out there somewhere. And the courgette and squash plants have withered and died. I wonder if they think it's autumn?
Oh!! I see! The fruit is boiled, not the whole cake! That makes a bit more sense....but if you're cooking it for two hours, why bother to pre-cook the fruit?
Come to think of it, a boiled cake is a pudding . I made a yummy blackcurrant one (in the microwave!) in July when, if you recall, it wasn't really summery enough for summer pudding.
