I've had similar issues this year - ages to germinate and slow to grow. Looking at yours tho, I'm wondering whether you planted them deeply enough and now when you water, the soil is displaced. Perhaps building up the soil around the stems and being careful when you water ? I've had to do the same with some of mine and it seems to have helped.
I think it's a case of bit by bit @Escapetothegarden over the coming weeks altho I can't say for sure. I love beetroot so I've been particularly miffed this year that they don't seem to be doing as well as in the past. Hopefully someone on here will be able to offer further advice/suggestions - or, preferably. a miracle cure
I would build up the soil so they are supported better @Escapetothegarden , but also only mist water them when they are that small. Anything with more force will knock them over. They are not too behind for a May planting, so just give them time.
For some reason my- beetroot seeds are taking a long time to germinate this year - possibly weather related. I normally grow Subeto which I purchase from DT Brown in Newmarket. I've just bought new seed from them plus some Detroit F1 from a local GC. I'll have to see how they progress. Bonus - DT Brown also sent me a free packet of Pac Choi and a free packet of Carrot (Topweight) seeds and gave me 20% off my beetroot seeds.

They don’t have much stem though I think so I will only really be able to raise it a small amount.
