I have just put carrots, onions, parsnip, Swede, lentils, stock, some jelly stuff that came from chicken and set in the fridge, two stock cubes and lots of coriander all in the slow cooker. I will put it in the blender and serve with some nice bread.

I am no domestic goddess !

Thanks, SwissSue. This night I eat only a soup - not hungry - 12pm: 32degree! Coconut soup with chicken. Not so heavy, but tasty: 2 cups coconut milk, 1 cup chicken stock, 2-3 medium pieces fresh galangal, peeled and sliced, 3 chicken breast fillets(cut into well pieces), 2 teaspoons chilies, finely chopped,1tablespoon fish sauce, 1 teaspoon brown sugar, 1/2 cup fresh coriander leaves, 5 coriander leaves for garnish. Add coconut milk, chicken stock and galangal in a pan. Bring to boil and simmer over low heat for 8 minutes, stirring occasionally. Add chicken pieces and chilli to pan, simmer for another 6 minutes.Continue stirring until cooked and all ingredients mixed well. Season with fish sauce and sugar. Add coriander leaves Before serving, garnished with remaining coriander leaves.

    Tiger, is galangal ginger?

  • ThaiGerThaiGer Posts: 165

NOOOOO! Never use ginger instead of galgant! Is NOT approximate(?) a galgant/galgal-tast. Look GALANGAL and GINGER.

Ginger you can eat, but not galgal(only for spicy tast) , it's very hot spicy in your mouth. Try to chewing galgal is okay but no eat image

Have just looked on Wikipedia and found that it is a member of the ginger family, but much stronger!

Could do with 30 degrees. Just for a while. Better than -4. image

today 30degree at 12.30pm but wehave a little bbq grilled pork: 450 grams pork, slice into thin and long strips, 2 tablespoons sugar, 1 teaspoon salt, 3 cloves garlic, minced, 1 tablespoon coconut milk, 1 tablespoon fish sauce, 1 package bamboo skewer. 1. Marinade all ingredients together about 2-6 hours before grilling (depending on how much time you have, longer marinade time will make the pork more aromatic and delicious). 2. When the pork is ready, thread a skewer through the pork. Grill the pork until it is well done. While barbequing, brush pork with marinade. 3. When done, serve with fresh vegetables and slices of cucumber and tomato. Thai people love to eat this dish with Sticky Rice. In this case, you can also serve with Sticky Rice.

I hope for everybody a good evening, ThaiGer
