Taking up black coffee late in life & not loving it.

I’m supposed to be cutting out milk, and the sticking point is coffee. It all tastes so bitter without! I’ve tried gradually cutting down, and may have to stick with that method, but still not enthused. I’m definitely not a Mellow Birds kind of coffee drinker. Carmarthenshire (mild, wet, windy). Loam over shale, very slightly sloping, so free draining. Mildly acidic or neutral.
