@Topbird  😊 My German friend hasn’t appeared yet but a couple of other foodies agree that it’s pork … a steak from the upper shoulder neck region.
    Hope that helps/is reassuring.
They both agree it’s definitely not camel or horse 👍

    I found pork neck steak.
Dordogne and Norfolk. Clay in Dordogne, sandy in Norfolk.

@Topbird … this is what my friend Uschi in Wuppertal has replied …
“Yes, KC is right, it is pork, the continuation of the cutlet bit from the shoulder towards the neck. A little fattier (but marbled rather than fat bits outside), so very good for BBQing. And what with it smelling so strongly I guess it is destined for that. Grillfleisch ...

I am never too sure about cuts, either, as there are so many and so many varieties.

If they want something for the BBQ, best to as for "Grillfleisch" or "zum Grillen" (for BBQing). Any good German butcher's will have plenty on offer.

If they want to fry it "zum Braten" will help. for braising will be "zum Schmoren".

They won't get far with pork and beef and the like: it is Schwein and Rind…”

Hopefully that helps 😊 Sounds as if he got the right stuff for a BBQ after all 😊

    Thank you my good friends!

Am now reassured that I shall be cooking pork steaks - albeit an unfamiliar cut from around the neck area. No humps involved @Biglad (and no tittering at the back either!).

A little further research suggests the Germans often marinade this cut in a combo of minced onion, garlic and herbs which probably explains why the fridge smells of slightly rotten alliums... On the plus side, this cut should be quite succulent👍 Live and learn - every day's a school day.

Thanks again everyone - especially Uschi in Wuppertal. Don't you just love the internet when it works as it was intended - to connect, help and inform?

I'll bore you with gradierwerks tomorrow Hazel😉 - time for bed now.
