@Winston_The_Gravity_Man Potatoes, and their products, do not count as one of your 5-a-day as too high in carbs. Sweet potatoes are fine tho, being a different veg altogether.
I make cakes with beetroot, carrots, courgettes and parsnips but not all at once. The Belgians and French like them too as long as they've tasted them before I reveal the secret ingredient.

Now then, @Obelixx , that's a real interesting bone of contention.
I've read that potatoes weren't included in the list of 'healthy' vegetables because it was felt that their processed derivatives would be included by people as being part of their five-a-day, and that would be against the spirit of the thing. If you keep the skins on your potatoes they are more healthy and could be included but aren't because they're not on 'the list'. Could you eat the peelings and discard the rest of the potato ? Nope, because again, anything 'potato' is not on the list
If you're in the UK you can't have sweet potatoes either because yams are not included by the NHS on their five-a-day list. They're specifically excluded in fact. Cassava and plantain too.
Talking of the UK's Five-A-Day, I found this interesting .....
The USA also
recommends 5 a day, but many countries recommend a lot more. France
recommend 10 portions, Canada 5—10, whilst Denmark encourages people to
aim for 6. And Japan encourages a whopping 17 portions, as 13 portions of vegetables and 4 of fruit.
I like the idea of your cakes including vegetables ... with the obvious exception of those awful green cucumbery things ... seems like a nice thing. I like carrot cake

Well, @Winston_The_Gravity_Man, we all know how up-to-date the NHS is and that it's worth compating info from other countries with different ideas. Common sense tells you sweet potatoes are good - loads of nutrients and fibre.
Living in France, as I do, I know a fair few locals who think vegetables in general are the work of the devil and one or two who don't like coffee or chocolate.

I'm with @Dovefromabove in preferring veges to fruit. Courgettes and Aubergines grown here and the peeled stalk of broccoli when you are preparing it is very tasty,
