Clari, it's always useful to have some cooked food in the freezer instead of slaving away in the heat.

Had lunch out with three ex colleagues so just a light supper needed later.

Hardly cooking anything much here ... living on salads, quickly grilled veg, bread, cold meats, cheeses, smoked mackerel .... that sort of thing.

That will do S for a starter but unfortunately the heat doesn't seem to be affecting his appetite.

Two fish pies cooling in the oven for Friday (I'm out tomorrow). Now waiting for him to let me know when he's on his way home so I can start staring at the chicken and hope it turns into a good meal.

The other think I'm doing quite often at the moment is putting a chicken stuffed with some onion, lemon and herbs into a slow cooker, smearing some butter or olive oil over it and leaving it there all day.  You come home to a roast chicken but the oven hasn't been on to heat the kitchen up.  Some new potatoes and salad or green beans ... second out having to day there's lots to play with ... stir fry with veg and noodles maybe ... again without having to heat the kitchen up by turning the oven on or having something simmering for hours.

That's a good idea, Dove. I might copy you.

Even if you don't put any liquid in the slow cooker with the chicken, you get a load of lovely cooking juices so I use them to make a sort of quick minestrone soup with chopped onion, peppers, courgettes ... a tin of cannelini beans, a tin of toms and some basil ...
