Evening all. 11 1/2 hour day to day. I drove through a torrential downpour on my way to Tintagel, but mercifully it hadn't reached my customer. ( I didn't take a jacket this morning ) LP, no news on appt yet. I saw the specialist in mid April and she said "3 months" so hopefully I'll hear soon. The sea at Crackington Haven was divine , just little ripples rolling in and hardly anyone there when I passed at 5.30. I've just re-heated some left over stir fry. I'm thinking a shower and bed once Spikey gets his supper. @Obelixx, how did your banana cake turn out. I've come home with a load of pretty ripe bananas and wondered if a total novice like me could manage a banana cake/ loaf?
It tasted wonderful when I licked the spatula and gave off wonderful aromas when baking but won't be eaten till tomorrow as I always think banana cakes need a day or two to "ripen". Very easy cake to make and bake in a loaf tin. I've modified it a bit and always add either vanilla extract or a sachet of vanilla sugar to cakes.
Wisley Café’s Banana
Cake
2 ripe bananas 150gr butter 150gr soft brown sugar 80gr raisins or sultanas 300gr plain flour plus one sachet of baking powder or 300g UK SR flour - not French or Belgian 2 med eggs 100ml rapeseed, grape seed or sunflower oil
1. Pre-heat oven to 180C/gas
4/160C fan. Grease & line a 1 kilo/2lb loaf tin.
2. Cream butter & sugar
together until light & fluffy then add the bananas and whisk again till smooth.
3. Add the eggs with 50g of the flour and whisk again. Add the oil and the remaining flour and baking powder and whisk gently - overworking will toughen the flour. Briefly whisk in the raisins.
4. Pour into tin & bake
for 55 minutes then test and bake 5 mins more or until skewer comes out clean.
Allow to cool in the tin then wrap in foil for 2 days to mature.
I don’t bother but you can add
a topping/filling of 70gr full fat cream
cheese, 320gr butter, 300gr icing sugar & 1tsp vanilla essence all mixed
together.
Thanks Dove. Sugar mixed in and it's now straining thru a muslin.

It's to take to patchwork group tomorrow MrsG. I had 4 very ripe bananas so there's another which I may freeze or I may give to the neighbours at no 3 who have yet to try a proper British cake. The cattle farmers at no 7 had a Borrowdale tea bread to tempt them when they had flu earlier in the year and loved it.

Tricky week this week. Heading up to Dove country tomorrow for the funeral of my favourite uncle - my very first great gardening guru. We lost my aunt a few years ago, so it also breaks our link with Kings Lynn and my Mum’s roots - all very sad. Think we’ll have a forage round the garden and take him a posy from there - after all most of my roses had their first prune under his watchful eye 👀✂️🌹
