Lily Pilly, Last year a local farmer said 'Help yourself' to Bramleys, so I made Bramley Apple wine. With dessert apples I make apple pie with some cooking apple and a banana or 2 - a bit of spice (cinnamon, cloves etc, whatever you like) and then you don't need to add sugar. The result is divine
Have just made 'Winter fruit salad' - Pears, peeled, cored and roughly cut up and put into acidulated water.(water with juice of 1/2 a lemon) Large stainless steel pan, big handful of walnuts, dried apricots and 2 bananas, vanilla essence and a slurp of honey, add the pears and some of the water, sieved, and bring to the boil, simmer for 3 or 4 mins. I then pour off the liquid and thicken slightly with corn flour, then pour back onto fruit. Refrigerate and have with Greek yoghurt for breakfast or pudding.
