My hubby, a former baker, doesn't approve of the Chorleywood process and so we haven't had bought bread for yonks.  Chorleywood, with only one proving, could compromise digestion in some people too.

And there’s so much pre packed faux sourdough around … ie it contains a flavouring to make it taste like sourdough, rather
than proper sourdough which has an extended fermentation and proving period which works on the gluten and makes it much better for the human digestive system.

@JennyJ I haven't read that since I was in my early teens. Read it in a day. Couldn't put it down.
Got sucked in again! I've read several pages. Another one for my kindle
    Thanks for reminding me.

The days when Granny put butter on the bread and wiped it off again before slicing the bread, held under her arm. Takes me back 70 years or so.
Freshly baked home made bread beats the rubbish sold in shops, hands down and blow the crooked cut!

Sourdough tastes vinegary to me. Difficult to avoid it these days.
It makes really nice toast but it's not very nice otherwise imo

  • @B3 and @Loxley I bought a small sourdough yesterday and wasn't sure of the vinegary taste. It was a Sains Taste the Difference.

Thanks @punkdoc 😃  … love REM … I knew that quote was familiar but couldn’t place it.

@KT53. I tried the finger along the blade thing. It definitely has possibilities. However, I can't be sure as I started off with a spectacular wedge

I usually find it too stolid, and yes vinegary is about right. Toasted it goes beautifully crispy though. Actually it's a good bread for me, as I'm not tempted to eat slice after slice.
