@Dovefromabove I agree, they’re using theirs onions as chives, I’m not sure the younger generation know as much about vegetables, a few I know live on pasta and mince.

@Whiterot I mentioned carrots but just as something where you can plant the tops so that they flowered for insects, you then get the seeds as a extra bonus. You can do the same with parsnips and they are excellent at attracting hoverflies. It's more of something to do if you have an allotment or a bit of unused space.
The carrot tops I used to grow when my daughter was little, along with seeds, it's a great way to learn about nature, young and old. I've learnt quite a bit just by reading this thread.

I'm not a yungun but there's still some vegetables I haven't tried yet. Globe artichoke, celeriac ( I think I might have had it in a restaurant, though🤔) to name but two - and strange, to me, mushrooms
Love Globe artichokes ... don't have a lot of space in this garden, but we're seriously thinking of turning our rhubarb patch into a home for a Globe artichoke plant or two.

@Dovefromabove. Got mixed up. Been growing artichoke for years for the foliage and flowers. I was thinking of the ugly round lumpy white turnipy - looking thing. Maybe that was the celeriac. Edit Jerusalem artichoke. Never tried it but it is definitely lumpy but not turnip shaped😵
Very tasty in modest amounts ... roasted with lamb they're delicious.
However, beware of their flatulent effects when eaten in larger amounts ... and a bowl of my Jerusalem artichoke soup nearly induced labour in a very pregnant friend
