I've known for a long time was goes into black pudding.When we were in Scotland a couple of years ago I asked a butcher what went into white pudding. "You probably don't want to know" was the response "...and you definitely don't want to know what goes into red pudding".
I couldn't bring myself to try either after that. I didn't even know that red pudding was a thing until that day.... I need to go and Google them now you've reminded me of that conversation🤣

@Topbird - white pudding was a favourite in our house growing up. I couldn't even look at it now! Mind you - black pudding's the same for me. There's a brilliant bit of TV from many, many years ago, with Nick Nairn, when he had to help a wumman making it from scratch . He just about heaved up. The look on her face was pure gold It was shown recently in the prog he does with Dougie Vipond. The Food Guys.
My oldest nephew, while at Uni, was very proud when he was able to try 'the deep fried Mars bar' created in the local chippy where he had his student digs. As he's now a lecturer in sports science, I think he's left that delicacy far behind him now....
It's a place where beautiful isn't enough of a word....

Love White/Hog’s Pudding … haven’t had it for a while … don’t see it in St Ives 😂 … but then I’m a big fan of Andouille and Andouiettes and tripe and chitterlings and all sorts of offal. Perhaps I should get @Hostafan1 to send some up to Norfolk from Devon by pigeon post. 😉

It seems to be very much a Scottish thing like deep fried Mars bars.....
