Hello @josiethelens! Sorry to hear your husband has been so ill - hope he recovers well in the lovely clear Irish air...
We have only a third of an acre here, and have had ups and downs over the past year (including discovering honey fungus), but our experience of rural(ish) Ireland is almost entirely positive. Though buying plants and seeds has been a bit of a challenge... I can recommend Irish Seed Savers if you're interested in local apple varieties and heritage veg seeds. They're very local to here, but do mail order:

Edited to say: there's also a good nursery for herbaceous perennials near here. They propagate them all themselves, and grow them tough, in a hilly area outside. They do mail order too:
Husband nearly died from Covid, so we up sticks and have started a new life in rural Ireland. Blank canvas of 2.5 acres of fields to start transforming into a veg patch, a wildlife pond and a cottage garden. OMG what have we done lol!

Check planning permissions before you do anything drastic, changing from agricultural to "garden" isn't always straightforward.
My Advice? Start small don't try to do the whole thing at once, we're still fighting the area round the house here after 2 years and the fields are still rented out to a local who ploughs and sows them (we have 5 acres)
