    Woke up this morning thinking "I'll split the big rhubarb crown today, I'll probably have enough to give some away."  Opened my email and there's a Freecycler asking if anyone has rhubarb crowns to spare!
  • Actually, @Dovefromabove, it was @Yviestevie who mentioned the Be-Ro cookery book - but my mum had one too, and it's now in my collection...   :)
    Since 2019 I've lived in east Clare, in the west of Ireland.

    It's nice to remember recipes my mum used to make - I think her "cut and come again" cake might have been from the Be-Ro book.  Must look it up.

    My hubby keeps reminding me that his mum used to make delicious parkin... I have her hand-written recipe book so I've not really got an excuse not to give it a go.  She was a great cake maker though so it's a hard act to follow!

    The trick with Parkin, @Liriodendron , is to make it several days ahead of when you plan to serve it so it can go sticky and all unnecessary.
    Vendée - 20kms from Atlantic coast.

  • Yes, so I believe @Obelixx.  Strange, when most cake goes dry with keeping, that parkin goes more moist...

    I hide it for 3 or 4 days before it's unwrapped.  Doesn't last long after that, especially when there has been gardening to work up an appetite.
