I wonder if the crumbs depend on how the dish is shaped. We have a small pets type bowl, the sides are low but vertical, not high, maybe it makes it hard for hogs to scoop up any crumbles. Saucer would be easier perhaps.
I think the crumbs are okay for wild birds. Many eat a wide variety of food, so a few meaty based biscuit crumbs would not harm them.
Goodness knows all pondering on my part, some like the taste of some things better than others. Shrug
Yes, they are all different, just a humans prefer some foods to others I suppose. Our birds used to like peanuts but now only a small few will eat them - same with niger seeds too, they aren't eaten anywhere near as quickly as they used to be!
I am not sure about the saucer Rubytoo, but it would be worth trying one wouldn't it? Our "dish" is an old terracotta plant saucer, so the sides are not steep or high. I will give it a try in the next few days. Having said that saucers are quite rare in our house. We use mugs and saucers are a thing of the past!
I bought a double bowl dish from a Pound shop for my hog(s). Its for feeding kittens and cannot be upturned easily due to its shape. Biscuits in one dish, fresh water in the other. Come the Spring it might be too small but will worry about it then.
I use a dog food bowl (china) for hoggy food. It's quite heavy so doesn't get pushed around too easily. They used to push the old one around the feeding station and block the entrance, although they worked they could get out just by walking through it !
Mine use a plastic tray as it was the flattest thing i has,..since then i found they will manage a cat or dog bowl,..images captured through the glass.

Mine come out during the evening while its still bright,..they ignore the cats that come to visit and they eat the cats dried food,..granted they have poor eyesight as can be seen in the short video's below,..coming right up to the camera and sniffing to figure out what it is then coming up to my foot and sniffing again,..nothing bothered this particular Hedgehog,..food came first,..then off to safe haven which is inside my shed.

very wide and shallow terracotta saucer with a tiny rim ... they still leave crumbs
