One short term 'stopper' would be to tell them you believe there are birds nesting in the trees. It is an offence to disturb nesting birds so I'm surprised that anybody professing to know what they are doing, is willing to cut them back at this time of year anyway.

May help as short term but they'll probably be back round again once the nesting season is over. I would do as suggested, tell them (again) that you do not want the trees touched and that you look after them yourself. Take photos and let your neighbour know that you have done so and that you have also sought legal advice. As mentioned, try to do all this in a calm manner but state your position and that you do not wish to discuss it further.
True Dave, thought about that afterwards. Tempted to write a letter and drop it in along with a photo of our trees currently as I don’t like the feeling of not knowing when he’s going to knock on our door again next week, but at the same time it may not be the best approach I suppose.
