As you can see I use an old style trug & a flower basket to collect & carry most of my produce- been using them for years long before they started charging for plastic bags!
My preserves (above) are whole lemons (tallest jar), preserved in saline; to its left and right: red green and yellow peppers in saline; front left: red roasted peppers in olive oil, and Indian chutney.
I fear I'm not the greatest cook on the planet, so I take my recipes from the internet. I've done it before quite successfully!
And here is another photo with sliced lemons preserved in salt and lemon juice.
We had the first four sweet corn of the year today. (lunch). I picked another load of beans, french are finishing, runners going strong. Cavolo Nero is growing at a pace, I picked some for dinner. We had Polka raspberries with porridge for breakfast . There are loads of Victoria plums ready, the wild damsons look ready to pick tomorrow if it doesn't rain. The garage fridge is full of tomatoes, Early Worcester and Discovery apples and Beth pears.
Artemis & Danae I have Lemons growing in pots on the patio but they are sooo good fresh never thought of preserving them. I don't think I get enough at any one time anyway.
I don't grow lemons myself, though I love them both fresh and preserved. I wouldn't even think of having fish without lemon! Also, when I make a dressing for cooked salads, I always use lemon, not vinegar. I use vinegar on raw salads. It was something my mother did, so I do it too.
Preserved lemons don't taste like the fresh ones but they're just lovely. If you don't have enough of your own, you can always buy unwaxed ones from good supermarkets. They're good.

Did you grow the lemons too?
No, not the lemons! But, I preserve lemons every year. I simply love them.
I grew some peppers, carrots, parsley, dill, potatoes, thyme, mint, sage, basil, lemon verbena, angelica and winter savoury. I've been a busy girl!
The apples, plums and tomatoes came from my garden too.
The peppers did rather well.

Not much of a harvest then. Just 5 jars of pickles!!

5 on the table and 10 in the cupboard!
