It's evident here that this has been a rather good year for garden produce. Unfortunately, I'm not that clever. I grew some potatoes, which grew well in size but they also grew some black spots all over them. I will take a photo later, just in case somebody can tell me why that's happened.
Danae, your preserves look eye-catching but I can't really tell what is in the jars, so though I'd like to do some "squirreling" too, I can't follow your eample!
My preserves (above) are whole lemons (tallest jar), preserved in saline; to its left and right: red green and yellow peppers in saline; front left: red roasted peppers in olive oil, and Indian chutney.
I fear I'm not the greatest cook on the planet, so I take my recipes from the internet. I've done it before quite successfully!
And here is another photo with sliced lemons preserved in salt and lemon juice.

Some of the pears come off the tree easily today. I cut one in half and it looked good inside. Tasted sour though.
Am I right in thinking I need to store these in a fridge for 2-3 days to ripen further??

Not the fridge but just keep them indoors for a few days. When the neck next to the stalk is soft, they are ready.
