Even when you rub the leaves or stems Jess? You have to touch it to get the pong. My 'Black Lace' smells just like the wild elder. Not surprising as they're both Sambucus nigra
When you're cutting masses of it out of a privet hedge you get used to the smell. It does pong. And when you make wine from the berries it sort of tastes of the smell!

I agree with Nut, definitely Valeriana Officinalis.
A bee friendly plant and a native to Britain. I have taken a photo of the one in my garden to show you a mature plant.
I will have to move it in the Autumn as it is growing in the veggie bed.
