Our slabs look identical to that, and were laid in the 60s on a concrete base. So it's rock solid and flat with no wobble, but we do get weeds in the cracks. If that sounds similar to yours it could be the same base.
We pressure wash with no issue but any mortar in the cracks was long gone. Maybe you can use a washer with a covered head, looks like a circular metal detector, to protect against flying debris.
If they're not wobbly, pressure wash and new mortar will make them look good as new.
