We also have a massive patio, pink/grey slabs, not my taste but no way could we afford to replace them. We pressure wash in spring, Hubby has taken a load up, and re-mortared because we get so many weeds in the gaps, blasted things still come back especially "grass"
If the grout between the slabs is loose be careful with the pressure washer. I know you say you want the grout out, but lumps of it can be fired quite a distance by a pressure washer.

I've got the same problem and am picking them out every week.

I spray the joints between my slabs with Path Clear twice a year and that keeps them weed free.
