Have just spotted this thread, but haven't time to read every post. To get back to the original question as to why people start answering a question with the word So, I think it probably came over from America. It started amongst younger people in the business world, and now politicians and interviewers on radio and tv use it all the time. It's replaced the word Well and annoys me no end. I've given up shouting Well at the radio every time someone starts a reply with So.
Well isn't much better. It's just a way of saying something while you think of something to say. Better IMO to pause before answering. That also gives the imoression of thoughtfulness, whether justified or not!
