Thanks Dove, removal isn't really the problem, I just don't want the field at the back collapsing in on my garden. I want to avoid building a retaining wall if possible which is why I thought of raised beds.
I can't have my cake and eat it, I know. I guess there's no quick fix to it.
We've got a bank alongside our garden - we've built a retaining wall with a row of new 'sleepers', laid two high, with metal reinforcing rods drilled through them about 18" into the ground below, as in the background of this picture - would that do the trick of holding the field back for you?

Thanks for all the ideas guys, much appreciated. I'm going to start clearing the rubble but keeping my distance from the field. What I'm thinking is to remove the rubble and fill old tonne sacks. As I'm removing the rubble then I'll replace it with soil.

Dig out the rubble & use it to fill gabions, which then form the beds' edges.
Take before and after photos Leigh - and maybe some along the way - we love to see progress being made
