Peel back one or two of the green leaves surrounding the cob. If the kernels are ready, they will be changing from white to yellow. Boil one for five minutes, slather in butter and eat. I planted mine out early June, we stsrted eating them last week.
I've peeled some of it back but only the top area of the hair is brown the rest of it is yellow and I'm not sure about the corn as its too dark although it's revealed so I'm not sure
I harvested one when the hairs were brown and it was still a baby corn. As said, peel back some of the sheath, burst a corn, and if the liquid is cloudy, its ripe.
