That was the plan Artjak, however, I have to admit that OHs meal was delicious, it was like a keema curry in the courgette. Sometimes it's not easy being married to a trained chef!!
I've not tasted it yet since cold as it needs to be left at least a month but it looks a nice colour. It's the first time I've made it so don't know if it's any good really.
I'm definitely going to make Artjak's recipe at weekend....OH is out in Saturday so the boys and I will have it
A quick update on the chutney recipe OL posted a link to. I made some today and it tastes pretty good already so I can't wait for it to 'mature' Just one thing, the recipe doesn't say to skin the tomatoes - probably not necessary unless you're a chutney virgin like me - so I didn't and have spent ages picking out the floating tom skins
