    I'm very much in a dilemma now, I want to do chutney, Artjak's recipe looks lovely and I've also come across a great stuffed courgette recipe.  At the moment, because it's wintery and miserable I'm thinking stuffed courgette and save this one for when summer returns next month for our Indian Summer image

    I've roasted courgettes with garlic when oven on anyway then whizzed up and frozen in bags in odd corners of freezer. After defrosting add cream or cream cheese and chopped ham for great pasta sauce. Add tuna sweetcorn chicken peppers - lots of variants.

    I've given up.......OH says it needs meat and more spice as courgettes are bland!!!!  So OH is now cooking  with them, I'll just leave it to the expert and get on with my chutney.....hopefully the smell of vinegar will clear everyone out if the kitchen and leave me in peace!! image I don't know why I bother image

    OL, another time you could do the recipe and then add crispy streaky bacon broken upimage

    Great idea - my daughter gets the veggi bacon bits ready dried in tub - they'd be great even for meat lovers!

    I don't mind so much  it's just that I thought I'd find a recipe and make something really nice with the courgettes that I GREW (!!!) only to find what I was going to do isn't good enough for the men of the house (who are determined for me not to be a veggie!!) Anyway, I have the ingredients for my chutney so that's something image
