don't over water and water only when dry and yes I have grown them from seed and they are very good to keep going by picking the leaves regularly (when in the garden).
Which Kale are you growing? I have grown curly kale, but I really love the Italian one, Cavolo Nero, I believe there is a Russian one that has recently come on the market and is one of those 'super foods'. The great thing about kale is that you can be harvesting it all winter
You ask how often to water them, do you mean when they are actually in their final growing situation? I would just make sure they don't dry out if there has been no rain.
Mine are slightly in front of yours. I have them in a plug tray. They are just showing the first true leaves. I have put them outside to harden off. I will plant them out later on in the week.
I have cavolo nero, seaweed kale, and brukale, (and purple sprouting broccoli).
I am just finishing up the broccoli and brukale, but we have had green from this selection for the last 10 months. As I only sow a dozen or so or each seed, I am using 2 and 3 yr old seed. Kept dry, brassica seeds will last for several years. All in all a really economical crop.

Have they got one of those clear plastic lids on? If so, they should not need more moisture than was added when you first sowed the seeds.
