Evening all... Another stunning sunset tonight as I left work
I don't ever remember such glorious sunsets so late in the year.... Makes me yearn even more to see the northern lights. We used to live in Campbeltown in the mull of kintyre and my mum reckons we would have them frequently but I was too young to remember!!! Well im planning my weekend baking I'm thinking chocolate after eight cake mmmmmmmmmm
I will happily make two lol.... Sadly not one of my recipes it's out of bbc good food mag ( December issue) but you could just make a moist chocolate cake( cheat with a mix if you don't have time) and melt a pack of after eights with 4 tablespoons of cream in a pan!! Use this ganache to sandwich together and cover with turquoise icing with peppermint essence added... Decorate with candy canes..... Which reminds me.... Has anyone that made my plum and russet mincemeat tried it yet???

Plum and Worcester mincemeat, mixed with extra James grieve apples in filo pastry parcels. With custard. OH a happy man.
