    Aunt rudys green german vs mortgage lifter vs kellogs breakfast.   My wife liked mortgage lifter the best.  I liked aunt rudys the best.  Kellogs breakfast was 3rd for both of us.

    Morning James

    My mother-in-law who was Italian from the Calabre region would choose tomatoes such as in the photo above - nice and meaty, regardless of size.   Choose a day that is dry not with a damp sea breeze.

    She would slice them fairly thickly and spread them out onto the grill on top of the roasting dish.  Into a sunny spot - keep your eye on them for flies and birds.  If you can find some muslin cloth or something to protect, it helps, but you can throw the material away afterwards.   Bring them in at night.  Depending on the size and thickness of the slices, they can take from 3 - 5 days depending on the dryness you wish.  

    Place in jars and cover with oil.  Olive or any vegetable oil is fine as it seals them.

    She would also make "la tomata" which is a tomato concentrate, again sun dried and stored in jars with an oil covering.  An all day effort, with everyone stirring the pot so that it wouldn't catch!!  Heat, flies, sticky tomato puree....all done in August which is usually the driest month here.

    Good luck with the drying.  Start with a few tomatoes to see if the weather permits!!

    Here you are James!!  A few tomatoes drying in Sicily.  They are the oval (Roma) type.

    I thought the tomatoes in the photo at the top of this thread would be ideal for drying @jamesholt  They need to be meaty with not too many seeds.
