You have two different growth habits in those two maples. The first is an upright, normal tree type and the second a weeping type. We have both as well and the weeping will grow up a little but more outwards, getting wider as it goes and the upright will just get tall and bush out, sometimes developing an obvious trunk.
I think blood good is a good shout for cultivar as it's a common one that looks like yours. We have two and they don't seem to grow as fast as other maples.
Most GCs stock relatively straightforward varieties to suit the UK climate and conditions, with some variations in colour, habit and size. Other outlets [DIY stores, supermarkets etc] mostly stock the easier palmatum types -like Garnet and Bloodgood etc, and the green/yellow equivalents. Generally speaking, the palmatums are easier to grow than the dissectums as they cope with variable conditions more readily, especially windy sites. Dissectums get shredded much more often.
It's a place where beautiful isn't enough of a word....
