It can be tricky to "cut a climber back" when it's growing through hedges, especially through prickles like with hawthorn. I don't really think of Travellers Joy as a full group three, as it's a wild plant and wouldn't get cut back in nature.
I would get the trees going first and when they are strong and you see how things are, see what you might want to grow through them. They will all be competing for water. So feed well, mulch well each year and water continuously and generously through the first couple of years when it hasn't rained.
Not something I would personally put into the hedge you're planning. Get the hedge properly established, and if you feel it needs something else in a couple of years, look at a climber then. You already mentioned 'a few' Loniceras and Clematis, but you said it wasn't a very big/long hedge. How long is it? Many honeysuckles are very 'at home' in hedges, but you'd probably only need one, unless the hedge is more than around 40 or 50 feet. A single, better behaved clematis would also probably be adequate [montana] or two of the Group2 or 3s, and you'd need to ensure you prepped the ground accordingly for either.
