Beetroot - have I left them too long?

    I would try slicing before boiling.  You might be wasting your time.  They can get like trunks of wood.

    Nigella does a great roast of vegetables on her last series.  The beetroot come up sweet and al dente.....that is to say, if yours are edible.
    A good hoeing is worth two waterings.

    Never ever cut into the skin of a raw beetroot before it's boiled … it’ll bleed into the water and lose its colour and flavour. 
    And I agree with @tui34 … roasted beetroot is delicious.
