Beetroot - have I left them too long?

My beetroot are very large - will they still be okay to eat? I usually pick them when they are the size of a tennis ball, but they are much bigger now! 🤦‍♀️
Thanks in advance.

  • Absolutely, just steam them and if the leaves are nice and fresh they're lovely too.

  • If the harvest is so much you can always bottle them or freeze them for later in the year.

Spicy beetroot relish … lots of recipes online. Some with a bit of orange 😋 or add some chilli or horseradish … 😋 😋 😋

  • Ah ... that's a relief, I was afraid they might be hard and woody. Thanks everyone.
Is there a time when they are deemed too big or 'old' to eat?

  • I usually pickle them - I have never thought about freezing or roasting them ... and a relish sounds lovely! Thanks again. 😊
  • You will know when you try to slice them 😂 if you need woodworking tools...then, don't eat

We've just pickled some of ours and, when you try to slice them after boiling, it'll be obvious which ones are woody.
  • Ah ... thank you for that. 👍
