I don’t think the second one is saraccocus, if you look closely at the plant it looks like it’s coming into flower and doesn’t look like a sarroccus neither do the leaves.

Skimmias are very low maintenance. They need shade or semi shade, and like an acidic soil. I don’t do anything to mine except to remove dead/diseased looking branches (think I found two over the course of 4 years) and top up with ericaceous compost every year. No pruning needed. I only water them if it’s been really hot and dry.
About varieties, I have Skimmia japonica ‘Rubella’, ‘Kew White’ and ‘Finchy’. ‘Finchy’ is my favourite being quite floriferous. Haven’t got ‘Obsession’, which looks to be popular because it is a hermaphrodite which means it can self-fertilise and you are guaranteed berries every year.
