Vegetable ideas for dear old dad

Good afternoon everyone. Has anyone any ideas what vegetables my dear old dad could grow over the coming autumn/winter months. Dad is 89 and in good physical health but gets quite melancholy come Summer’s end. He loves his veg garden in the spring and summer but after the runners, tomatoes and onions are over/lifted he loses interest. I’d like to surprise him with some seeds/sets/plugs that will keep him occupied over the autumn and winter. He has a good size greenhouse and cold frames in the garden. Any ideas would be much appreciated. He’s not too keen on ‘modern’ veg and prefers traditional..... I think you know what I mean 😉. Thanks in advance everyone.

I think Lambs Lettuce is growable over winter but I've not tried
