I need to get my head around what veg to plant at what times so I can harvest at every month. (is that even possible?)
In 3 6x4 beds no it isn't.. if you were a very experienced veg grower, possibly. As a novice ...no chance.
I had much better results as a novice than I have now. I was super keen, in a rented house with pots only, super organized, super creative with hanging baskets and various containers. I had plans made, notes about every sowing, germination and harvest, dates set in advance for successional sowing. But even then, I was absolutely bad in successional sowing. It needs way too much discipline.
On the other hand, it's relatively easy to have something every month. And there are vegetables like perpetual spinach which can be harvested for months from just a couple of plants. Unfortunately, leaf miners loved them in my garden and my husband refused to eat them after discovering a live one in his salad.
