Harvesting sunflower seeds

Can anyone tell me if the seeds from my sunflowers will ripen after having cut the flowers off the plants. They were looking very tatty and the recent rain made them lean precariously so I had a tidy up. All the information on line seems to be from US sites.

A friend of mine has cut one off and put it inside a paper bag to dry off. Not sure if it will work though.
