When they get to marrow-size (and there are always a few which get missed!), I cut them in half lengthways, hollow and stuff them with chopped tomatoes, onion, bacon, cheese, fresh breadcrumbs and herbs - delicious! The salt from the bacon and cheese works it's way into the flesh giving it some flavour - they're pretty tasteless otherwise.

I swapped runner beans for eggs , and made a frittata with new potatoes, courgettes, onions and tomatoes,french beans and some cheese. Only had to buy the cheese.
I love stuffed marrow - sometimes I stuff them with a sort of Cottage Pie mix of minced beef, onion and grated carrot, bound together with some breadcrumbs and herbs. Sometimes I use a mix of minced lamb with a Middle Eastern spicing -delicious, especially with a sauce made of roasted home grown toms, garlic, oregano and basil

i love slicing courgettes into slices, grilling them and then adding mature cheddar, grilling again, and seasoning with cracked black pepper and sea salt. its my new fave snack
i sort of braised them in a mix of wie and soy sauce last night. they were OK but could have done with a few ninutesless cooking to retain their courgetteness

My mum made marrow and ginger jam one year. It set like toffee. Us kids liked it though.
Courgette soup: Peel the courgette put in a blender add a good dollop of cream cheese, salt and pepper and heat up...beautiful!
PS:tastes best if they are blended when no more than 25cms long
