I tried the bent leaves over the curds but it never seemed to really work never thought of a plastic bag would have worried it might "sweat & rot"
I try to leave some of the leafs a little long so the bag doesn't rest directly onto the curd and I try to get as large an opening at the bottom as I can. Haven't had one rot yet. I think once the curd starts to develop it grows fast and it isn't covered for more than a week / 10 days. Not long enough to get damp and rot.
