    Keep the curd covered either by leafs from the cauli itself or a plastic bag to keep the rain, frost, sunlight and everything else off the surface.  As the curd starts to develop cut away the larger outer leafs and pop a clear or white bin liner or some other bag over the curd and lightly tie underneath.

  • I tried the bent leaves over the curds but it never seemed to really work never thought of a plastic bag would have worried it might "sweat & rot" image

    Cheese sauce by all means, but it also makes a lovely salad.  Steam it gently so it still has some crunch, and toss it in a mustardy vinaigrette while it's still warm.
