Hi,
Does anyone know what weed this is? Its taking over my garden and the roots are growing so deep I'm struggling to get rid of it.

If it is between paving slabs, stamp on it to crush the stems and then paint with glyphosate gel stick or spray with glyphosate. It has a coating that has to be broken so that the glyphosate can penetrate. It will take several applications at monthly intervals through the growing season. Good luck.
It's Field Horestails (Equisetum arvense). If, like you mentioned, is taking over your garden, you are going to have a serious problem eradicicating this monster. This could be a very long war of attrition as it is so difficult to kill off.
Most weedkillers simply drip off and the 'bruising' method is useful but if there are hundreds of stems, it will be very laborious work.
