Can I train a holly bush

I am still browsing holly bushes and am looking for one with lots of berries.
I want to plant in front of an ugly 6 foot fence and train them so they are taller rather than spread out.
Do they respond well too that or will the top be bush but the sides end up being empty branches?
This is the list I've been browsing...
