All the nicest trees lose their leaves over winter. I have several evergreen standard variated ligustrum with shrubs underneath. Really pretty trees and can be kept in large drooping lollipop shape. Pretty all year round. Specimen conifers are nice and if money no object a cloud pom pom tree. Some single shrubs can grow into a nice tree like specimen. I have a red robin that started out as a standard and is now a lovely ever"red" tree.
Ornamental pear would be my choice - Pyrus salicifolius - as the foliage is so nice, and Amelanchier as it also has good autumn colour, (it also has flowers and fruit) and Euonymous alatus (?) which has great autumn colour would also be good.
I'd go for something which has flowers and fruit every time. Most evergreens are fairly dull as specimens.
It's a place where beautiful isn't enough of a word....

You could try a Magnolia stellata and a Camellia as long as your soil suits them, but why would you not want berries when they bring in the wildlife

I've also started on a blank canvas, if you are dead set against fruit and berries then one of my new features is a line of different coloured Azaleas. Will (hopefully) be a smaller, and less pink, version of this
